1 pound navy beans
1 carrot, grated
1 small onion, chopped
3 or 4 potatoes, cubed
1 slice ham, cubed (usually use leftovers from a baked ham)
salt and pepper to taste
2-4 tbsp. ham base,(found this in a bulk food store)

Directions:
Directions:
Wash and soak beans overnight. Cook in about 3 quarts of water, along with ham for 1 1/2 hours. Partly mash beans. Add carrots, onion, potatoes and seasonings. Cook about 30 minutes longer, until potatoes are done. Serve with hot corn bread.

This recipe came from a little paperback "County Stars Cookbook", a Christmas gift from my sister-in-law, Pat Nye in 1982. I have been making it several times each year, especially during the winter months, ever since. A real family favorite of ours.
