2 3-oz pkgs Ramen noodles, crushed
1 cup chopped cashew pieces
1 16-oz pkg shredded coleslaw mix
1 bunch green onions, chopped
¾ cup plus 1 tbsp plus 1 tsp white sugar
¾ cup plus 1 tbsp plus 1 tsp vegetable oil
1/3 cup plus 1 tbsp plus 1 tsp cider vinegar
1 tbsp plus 2 tsp soy sauce


Directions:

In a pre-heated 350 degree oven, toast the crushed noodles and nuts until golden brown (7-10 min).

In a large bowl, combine the coleslaw, onions, noodles and cashews.

To prepare the dressing, whisk together the sugar, oil, vinegar and soy sauce. (Heat to dissolve sugar if you want, then cool.)

Pour dressing over the salad, toss and serve.
