1 lb sliced bacon, diced, or 1 lb of your favorite sausage
1 medium sweet onion, chopped
6 eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed
2 cups shredded Cheddar cheese
1 1/2 cups small curd cottage cheese
1 1/4 cups shredded Swiss cheese

Directions:
Directions:
In a large skillet, cook bacon (or sausage) and onion until meat is cooked. Drain. In a bowl, combine the remaining ingredients, stir in meat mixture. Transfer to a greased 9x13 inch baking dish.

Bake, uncovered at 350º for 40-45 minutes or until set and bubbly. Let stand for 10 minutes before cutting.

This can actually be made the night before and refrigerated to make for an effortless breakfast the next morning. You'll need it cook it a few minutes longer if it's been in the fridge.
