1 1/2 cups sugar
1 Tbsp all-purpose flour
1/2 cup ( 1 stick) butter, melted
3 large eggs
1/2 cup buttermilk, shaken
1 tsp vanilla extract
2 cups grated coconut, fresh or frozen
2 pie crust

Directions:
Directions:
Preheat oven to 350ºF
Pre-bake the crusts.
In an electric mixer, beat the sugar and flour with the melted butter.
Add the eggs, one at a time.
Add the buttermilk and vanilla.
Stir in the coconut.
Pour the filling into the prepared pie shells.
Bake for 45 to 50 minutes or until lightly browned and center does not jiggle.
A tooth-pick inserted in the center should be moist but not covered.
The coconut will rise to the top during baking.
