1 cup oil
2 cups sugar
2 cups mashed pumpkin
3 eggs, beaten
2 tablespoons milk
3 cups flour
3 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1 cup nuts
1 cup coconut

Directions:
Directions:
Mix the oil, sugar, pumpkin, eggs and milk; beat well. Add dry ingredients and mix well. Add nuts and coconut. Bake at 350º for 1 hour.

A fall favorite as it is best made with fresh pumpkin. Most times we served this with no frosting but a cream cheese frosting would be delicious with this!!
