2 tbsp. Olive Oil
2 Diced Chicken Breasts
1 tsp. Cajun Seasoning
8 oz. Sausage (I use Cajun sausage, but use your favorite)
3 Garlic Cloves
1/2 Medium Onion (sliced)
1 Red Pepper (sliced)
1 Green Pepper (sliced)
2 c. Sliced Mushrooms
8 oz. Fettuccine Pasta
5 c. Chicken Broth
1/2 c. Heavy Cream
1 c. Parmesan Cheese


Directions:
Directions:
Cook chicken in olive oil over medium/medium-high heat until almost done, add Cajun seasoning. Stir in sausage and garlic, cook about 5 min.
Mix in onion, peppers, and mushrooms. Cook until soft and onions are opaque. Turn heat to high, add pasta and broth. Cover and bring to a boil, reduce heat and simmer about 10 min. Add cream, stir and them add parmesan.


Serve with a sprinkle of parmesan
