2 c. Flour
3/4 tsp. Baking Soda
1/2 tsp. Salt
1 c. Sugar
1/4 c. Butter (softened)
2 Large Eggs
1 1/2 c. Mashed Ripe Banana (about 3)
1/4 c. Pina Colada Yogurt
3 tbsp. Dark Rum or Apple Cider
1/2 tsp. Vanilla Extract
1/2 c. Flaked Coconut

Non-Stick Spray

1 tbsp. Flaked Coconut
1/2 c. Powdered Sugar
1 1/2 tbsp. Fresh Lime or Lemon Juice

Directions:

Preheat oven to 350º
Combine flour, baking soda, and salt.
Beat with a mixer sugar and butter on medium until well blended. Add eggs 1 at a time, beating well after adding each one. Add banana, yogurt, rum, and vanilla, beat until blended.
Add flour mixture, beat at a low speed just until moist. Stir in 1/2 c. Coconut.
Place batter into a 9 X 5 inch loaf pan coated with cooking spray, sprinkle with 1 tbsp. Coconut.
Bake for 1 hour or until a tooth pick comes out clean.
Cool in pan for 10 minutes.

Mix Powdered Sugar and juice. Drizzle over warm bread.

Wear elastic waist ban pants cause you're gonna eat the whole loaf!
