Ingredients: Crust: 1 1/4 cups graham cracker crumbs 1/3 cup butter 1/4 cup sugar
Filling: 3 8oz.Packages cream cheese, softened 1 1/4 cups sugar 4 extra large eggs 1 tbsp vanilla
Topping: 1 1/2 cups sour cream 1/4 cup sugar 1 tsp vanilla

Directions:For crust Blend graham cracker crumbs, sugar, and butter together. Press crumbs on sides and bottom of a 10" springform pan.
Filling Mix softened cream cheese and sugar for 3-5 minutes with mixer ( stand mixer preferred) Add eggs and vanilla
Beat the entire mixture for 30 minutes. I do 10 minutes at a time so I can scrape the sides at intervals.
Pour the cream cheese batter in the graham cracker crust. Bake at 300* for 50-60 minutes. Remove from oven. Cool for 20 minutes. After 20 minutes, mix together topping and poor on top of cooled cheesecake. Return to oven for 10 minutes. I use a 9" springform pan and bake for about 70 minutes. (When tooth pick or whatever you want to use to test comes out clean, cake is still soft) |
