1 medium onion, chopped
¾ cup grated cheese
½ teaspoon salt
1 (10 ¼ ounce ) cream of mushroom soup
1 cup sour cream
½ cup butter
2 eggs, slightly beaten
¼ cup cooked chopped bacon
3 pounds sliced cooked squash
1 ½ cup Ritz crackers (crumbled into crumbs) + ½ cup Ritz cracker (crumbled into crumbs)

Directions:

Preheat oven to 350 degrees F.

Cook bacon , crumble and set aside. Save grease and saute’ onion in 2 tablespoons of bacon grease.

In a mixing bowl combine the onion, cheese, salt, soup, sour cream, butter, eggs, and bacon.

Add squash and 1 ½ cup Ritz cracker crumbs. Mix gently but do not mash the squash.

Pour into a 9 X 13 inch baking dish or casserole. Bake for 25 to 30 minutes. Remove from oven and top with the remaining ½ cup cracker crumbs. Return to oven long enough to brown the cracker crumbs.
