Ingredients:  
Use two or three of the following vegetables, as desired:
Sweet or Yellow Onions, halved and sliced into 1 inch pieces
1 - Sliced Yellow Squash
1 - Sliced Zucchini Squash
Handful of Okra, sliced in half inch slices
1 -2 Potatoes, thinly sliced
Broccoli florets, small
Baby carrots, cut in half lengthwise
Any other type of and amounts of vegetable, desired

Olive Oil
Cavenders Greek Seasoning and/or
Morton's Nature's Seasoning (to taste)

Directions:
Preheat oven to 400º. Toss all sliced and prepared vegetables desired in a large bowl with a liberal amount of Olive Oil to slightly coat all veggies.
Prepare a large cookie sheet pan by lining with aluminum foil. Spray foil lightly with a non-stick spray. Pour out veggies onto cookie sheet and spread out so they are about one layer. Some overlapping is okay. Sprinkle liberally with the seasonings. Bake in center of oven for 20 minutes.
