Mix together:
4 eggs
2 cups sugar
3/4 cup oil
2 1/2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
dash of salt

In separate bowl combine:
1 lb. carrots, shredded
1 cup nuts, chopped
1 cup raisins
juice and rind of 1 lemon
juice and rind of 1 orange

Directions:
Directions:
Pour liquid mixture into carrot mixture; blend well. Pour batter into well greased loaf pan and bake at 375° for 45 minutes or until done.
