3/4 cup light corn syrup
1/4 cup margarine
2 tsp cold water
2 1/2 cups confectioners' sugar (I use a bit less)
1 cup marshmallows
5 quarts plain popped popcorn (you can use 7 bags of the 100 calorie packages)
Optional: 1 1/2 tsp vanilla

In a saucepan over medium heat, combine the corn syrup, margarine, cold water, confectioners' sugar and marshmallows. Heat and stir until the mixture comes to a boil. Add the vanilla if you want extra flavor. Carefully combine the hot mixture with the popcorn, coating each kernel.

Grease hands with vegetable shortening and quickly shape the coated popcorn into balls before it cools. Wrap with cellophane or plastic wrap and store at room temperature.

You can also do some fun things to jazz these up--add 1 tsp of cinnamon, peppermint, or caramel extract or flavor oil; use coconut marshmallows instead of regular; but small Reese cups or Hershey kisses in the center; drizzle with chocolate. Add a bit of food color to your different flavors so you can tell them apart. Makes a great gift basket for the holidays!
