1/2 cup unsalted butter
1 medium yellow onion, finely chopped
16 oz pkg. frozen chopped broccoli
6 cups chicken broth (homemade is best!)
2/3 cup cornstarch
2 cup heavy cream
1 cup milk
1 cup water
1 lb velveeta cheese, cubed
2 cups sharp cheddar cheese (grated)
4 oz cream cheese, cubed
2 tbsp garlic, finely chopped

Directions:
Directions:
In large stock pot, melt butter over medium heat. Add onion and garlic. Sauté until onions are tender, about 3-5 minutes. Add cornstarch and blend with whisk until smooth. Gradually add in chicken broth. Stir in broccoli and simmer until broccoli is tender, about 30 minutes. Slowly stir in milk, cream and water, stirring constantly. Bring to slow boil. Add all cheese and stir until thoroughly meltted. Simmer on low heat for 5 minutes before serving.
