6 Medium chicken breasts (2 1/4 lbs total)
1/4 c. all purpose flour
1/2 tsp. salt
1/2 tsp. paprika
1/8-1/4 tsp. pepper
2 T. cooking oil
1/2 c. evaporated skim milk
1/2 c. chicken broth

Directions:

Cut any fat off of chicken breasts; make sure there is not liquid on them. In plastic bag, combine flour, salt, paprika and pepper. Add a few chicken breasts at a time to the bag, shake to coat. Remove chicken from bag, shaking off excess coating in the bag. Reserve any remaining flour mixture.

Now in 12" skillet heat cooking oil, add chicken. Cook chicken, uncovered, over medium heat for 10-15 minutes and turn until evenly brown. Reduce heat and cover tightly. Cook for 30 min. Uncover and cook 10 to 15 min. more or till chicken is tender and no longer pink. Drain chicken on paper towels. Keep chicken warm. Pour fat from skillet and discard.

For gravy, in a small bowl stir milk into reserved flour mixture. Stir in chicken broth. Add mixture to skillet. Cook and stir until thickened and bubbly. Cook and stir 1-2 minutes more. Serve gravy over chicken.
