4-6 tomatoe sliced or diced
1 large caramalized white onion (Personal Favorite)
Or 1/2 cup chopped green onion
1/2-3/4 cup sliced fresh basil leaves (Cannot have too much Fresh Basil!!)
1 cup grated cheddar cheese
1 cup grated mozzarella cheese or Monterey Jack
1 cup regular mayonnaise
1-2 tsp Tabasco sauce
1 deep dish pie shell (9")
Dijon mustard
Kosher salt and fresh black pepper

Directions:
Directions:
Bake pie crust according to directions until golden brown. Preheat oven to 350º. Squeeze as much moisture as you can out of tomatoes. (I like using potato ricer with finest screen) Put squeezed tomatoes in bowl and sprinkle with salt. Stir to mix. Let set for 10 minutes. Coat bottom and sides of pie shell with generous Dijon mustard. After tomatoes have set for 10 minutes, dump into colander to drain any remaining liquids. Return tomatoes to bowl and add onions and basil. Mix and dump into pie shell. In medium bowl mix cheeses, mayo, tabasco sauce and sprinkle of black pepper. Spread the cheese mixture over tomatoes. Place in oven and bake until browned and bubbly, 30-40 minutes. Cut into slices and serve warm.
