2 c. all purpose flour
2 c. sugar
3/4 c. unsweetened cocoa powder (Nestles)
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 large eggs
1 c. sour cream
1 c. milk
3/4 c. vegetable oil
1 1/2 tsp. vanilla
1 T. instant expresso powder

Frosting:
4 large egg whites
1 1/2 c. sugar
1/4 tsp. cream of tarter
1/8 tsp. salt
1 tsp. vanilla

Directions:
Directions:
In large bowl mix flour, sugar, cocoa, baking soda, baking powder, and salt until blended. In medium bowl whisk eggs, sour cream, milk, oil, and vanilla together. Mix egg mixture into flour mixture until smooth. Dissolve expresso powder in 1/2 c. very hot water and stir into batter. Divide batter between 2 greased and floured 9" cake pans. Bake 40-45 minutes at 350º or until toothpick comes out clean. Let cool 30 minutes. Remove from pans.
Frosting: I use canned chocolate frosting sometimes. This cake is very moist.
Put egg whites, sugar, cream of tarter, and salt in a large clean metal bowl set over saucepan filled with 1 c. of simmering water. (Don't let water boil or bottom of bowl touch water.) Adjust heat as needed to maintain a simmer. Cook mixture over medium-low heat, beating with electric mixer on medium speed until frosting holds stiff peaks. About 7 minutes. Remove bowl from heat and add vanilla and continue to beat until glossy and billowy. 1-2 minutes longer.
