1 large eggplant
1 3/4 cups Ritz Crackers
1 ½ cups grated American Cheese ( I use any cheese I have on hand )
81 stick butter
2 eggs
2/3 cup milk
1 teaspoon House Seasoning ( Paula Deen’s)

Directions:
Preheat oven to 350 degrees. Peel, slice, and boil eggplant for 10 to 15 minutes, until tender, drain. Divide cracker crumbs and butter in half. Add eggs, milk, House Seasoning, cheese and half the butter and cracker crumbs to eggplant. Mix well; pour into baking dish that has been sprayed with PAM. Top with remaining half of crumbs and drizzle butter over
