For the Veggies:

Half an Onion, diced
1 Tablespoon brown sugar
2 cups frozen corn
1 bell pepper (any color) diced
1 medium to large tomato diced
salt & pepper to taste

For the Dressings:

1 Tablespoon balsamic vinegar
3 Tablespoon olive oil
handful of large basi leaves (5 or 6) chopped
salt & pepper to taste
1 garlic clove finely minced

Directions:
Directions:
1. Heat some oil over medium to low heat in a large saute pan. Add the chipped onion and cook until very soft about 5 minutes.

2. Add in the brown sugar and cook over med-low for an additional 5 minutes. Once onions are nice and carmelized add in the chopped peppers. Cook over medium heat for 3 minutes

3. Add in the corn and cook for an additional 5 minutes or until heat through.

4. Mix all ingredients for the dressing in a separate bowl and whisk until well combined. Add the tomatoes and coat, then add the rest of the corn mixture

Serve and enjoy
