6 c. Water
3/4 tsp. Salt
3 lb. Young Small Carrots with tops trimmed peeled
( I like the multi-colored ones)
2 tbsp. Butter
2 tbsp. Honey
4 tsp. Fresh Ginger
Directions:
Directions:
Line a baking sheet with paper towels.
In a large skillet, combine water and 3/4 tsp. salt. Bring to a boil. Add Carrots. Return to a boil, reduce and simmer covered 10 -12 min. until carrots are tender. Carefully drain carrots because as they cook the tops become very fragile and some may come off. Set on prepares baking sheets and pat dry with additional paper towels.

Glaze
Combine Honey, Butter, and Ginger in a sauce pan over medium heat until melted.

Arrange carrots in a shallow bowl and drizzle with glaze.
