1 1/2 lb. Lean Ground Beef
1 package Taco Seasoning Mix
1 tsp. Seasoning Salt
1 c. diced tomatoes (I like fire roasted with chili's)
1 15oz. Tomato Sauce
1 4oz. Diced Green Chiles
1 c. Ricotta Cheese
2 Eggs, beaten
10 Corn Tortillas
2 1/2 c. (10 oz. bag) Grated Monterey Jack Cheese

Preheat oven 350º
In a large skillet, brown ground beef, stirring until cooked completely, drain and rinse fat. Add taco seasoning mix, seasoning salt, tomatoes, tomato sauce and chilies, mix well. Bring to a boil. Reduce heat and simmer uncovered for about 10 min.
In a small bowl mix ricotta and eggs.
I the bottom of a 13X9X2 in. baking pan, spread 1/2 of the meat mixture, top with 1/2 the tortillas, spread 1/2 the ricotta cheese mixture over the tortillas and top with 1/2 the grated Monterey Jack cheese. Repeat the layering and bake uncovered for 20 -30 minutes until hot and cheese has turned a nice golden brown.
