2 cans (4 oz each) chopped green chilies, drained
4 cups shredded Cheddar cheese
2 cups milk
4 eggs
1 cup Bisquick baking mix

Directions:
Directions:
Preheat oven to 425º. Grease pie plate, 10 x 1 1/2 inches. Sprinkle chilies and cheese in plate. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with a hand beater. Pour into pie plate. Bake until knife inserted in center comes out clean, 25 to 30 minutes. Cool 10 minutes. Serves 6-8.

This is from a little Betty Crocker Bisquick cookbook, copyright 1983 when the "Impossible Pies" which were similar to a quiche were all the rage. I made this a lot, sometimes hot cut into wedges and sometimes cool cut into little squares with a toothpick inserted and eaten as appetizers.
