3 oz pkg orange or lemon jello
1 ½ cups grated carrots
1 ½ cups well-drained canned crushed pineapple

Directions:

Drain pineapple and use the juice to make the gelatin as directed on package (if gelatin called for 1 cup of water and you got ¼ cup juice from the canned pineapple-use ¼ cup pineapple juice and ¾ cup water.) Stir in grated carrots and pineapple. Refrigerate to congeal.

When I was growing up it was tradition to have a jello salad for holiday dinners. I don’t know why we just made them on holidays. That tradition has since gone by the wayside. I always remember the orange jello salad that Grandma Loran used to make and Mom used to make the Lime jello or Strawberry jello salad. In recent years I have tried to revive that tradition without much success. The only other person I know who eats my Lime jello salad is Lou Ann. So we are going to keep on making our lime jello salad for holidays and enjoy our tradition anyway.
