2 1/2 c. Flour
1 tsp. Baking Soda
1 tsp. Baking Powder
2 tsp. Cinnamon
1/2 tsp. Salt
1 c. Chopped Nuts
1 1/4 cu. Vegetable Oil
2 c. Sugar
4 Eggs
2 c. Grated Carrots
1 c. Crushed Pineapple with juice

Directions:
Directions:
Preheat Oven to 350º
Sift together dry ingredients. Beat eggs, sugar and oil until smooth.
Add carrots and pineapple with juice. Combine all.
Prepare jars with oil. Fill 1/2 full. Bake with lids OFF for 45 min.
Put lids on immediately one removed.
Make sure you have a good seal after 15 min.
