6 – 7 fairly large sweet potatoes
1 ½ cups sugar
½ stick butter

Peel and then boil sweet potatoes on top of stove until almost tender but not mushy. You can bake unpeeled in oven. Cut sweet potatoes into large pieces. If baked in oven peel and cut into large pieces and place in 9” X 13” pan. Put about 1 ½ cups sugar and a small amount of water in a small boiler. Let it come to a boil and pour over potatoes. Dot with ½ stick of butter. Put in oven and bake 350 degrees until candied. Can add cinnamon.

This is Floy Waller's recipe for candied sweet potatoes and she was the best cook and always had something to serve when company came and baked more cakes and pies to give to folks. In fact, Aunt Floy prepared the meal that the family ate after her funeral. Aunt Floy had a massive heart attack just before she and her daughter, Joy got on I-85 to drive to Atlanta for Thanksgiving with Joy's family. As was the custom, Aunt Floy had prepared 2 coolers of food for Thanksgiving lunch. Since they were still in Auburn, Joy returned to her mom's house and the food was unloaded and placed back in the refrigerator for our meal after the funeral.

In true Aunt Floy form, she never wanted anyone to do anything for her. So she catered her own meal after her funeral.

I got this recipe from Aunt Violet, who was Aunt Floy's younger sister and P. Lynch Whatley's younger sister. Aunt Violet says that she has made these and she thinks the secret is not to have them too tender when boiled and continue cooking them down until they really look candied and taste candied. I have tried these several times and I agree with Aunt Violet the secret is not to cook the potatoes too much. I have had failures and have been successful on occasion but I cannot not give you a time for cooking. You just have to check the potatoes and stop cooking before they are too mushy.
