12 oz. baby greens
½ medium red onion, julienned
4 oz. feta cheese
4 oz. cubed mozzarella cheese (optional)
4 oz. dried cranberries
4 oz. caramelized walnuts (I buy these in the bulk food section at WinCo so I don’t have to make them :) I have also used other candy coated nuts in place of walnuts

Dressing: (this makes enough for two recipes)

½ c. white wine vinegar
1 c. olive oil
2 T. fresh-crushed garlic
2 T. Dijon mustard
1 tsp. salt
1 tsp. pepper
2 T. lemon juice

Caramelized walnuts:

¾ cup water
1 cup sugar
1 T. vanilla
1 lb. walnuts

Directions:

Toss salad ingredients in large bowl.

Whisk all dressing ingredients and pour over salad just before serving.

For Caramelized Walnuts:
Heat walnuts, sugar, vanilla and water together on low heat. Cook down, stirring every few minutes. (this takes about 3 minutes to fully cook down.
