2 lbs. zucchini, peeled and sliced
2 eggs
1/2 tsp. garlic powder
1 cup grated Parmesan cheese
3/4 cup mayonnaise
1/2 cup Italian bread crumbs
2 tbsp. butter
Directions:
Directions:
In a pot of boiling water, cook prepared zucchini until tender; drain. In a bowl, beat eggs. Add the garlic powder, Parmesan cheese and mayonnaise; mix well.
Add the zucchini; gently folding into the mixture. Place in a 9x11-inch pan. Sprinkle bread crumbs on top and dot with butter. Bake in a preheated 350º oven for 20 minutes.

Mom found this recipe in a Junior League cookbook. When we recently made it for a party, we didn't have enough zucchini, so we added a can of artichoke hearts that we chopped in place of 1 pound of the zucchini. The combination was perfect! We also mixed 1/8 cup extra Parmesan cheese with the bread crumbs, so the topping would be extra cheesy. We were tempted to change the original recipe, but you can decide which sounds better!
