1 ¼ lb. butternut squash

1 tart apple (Granny Smith--cored

1 TBSP. raw rice (not Minute rice)

1 tsp sugar

Pinch of curry powder

4 cups chicken broth(1 box)

¼ cup whipping cream

Salt to taste- milk to stretch

8 oz Mexican shredded jalapeno cheese

Peel and cube squash and apple. Place in 3 qt. saucepan with onion, rice, sugar, curry and chicken broth. Simmer 30-45 minutes . Puree in blender or food processor. Put back in pan.

When ready to serve: heat, add cream, milk and cheese. Stir until melts.
