Mom’s Baked Meatloaf Recipe

1 lb. ground beef
2 whole Eggs (beaten)
16- 20 saltine crackers (crushed)
½ large White Onion (finely diced)
½ tsp. Salt

Directions:
Directions:
Combine all ingredients in large bowl, mixing by hand.
Form into shape and put in loaf pan. Cover with foil and bake 350 degrees fore 65 minutes. Remove from oven, drain off grease, cover with cream of something soup, (celery, mushroom or cheese) return to oven uncovered for another 12 -15 minutes,

When meatloaf is done remove from oven and allow to rest for 20 minutes before slicing.

Dale and Ray always knew when Mom would make meatloaf. There were times when Dale would come by the house and Dad would say "don't open the door he is here to take the meatloaf".
