For the zucchini chips:
2-3 zucchinis
2 cups bread crumbs
3/4 cup Parmesan cheese
1/3 cup fresh basil, chopped
1 T. garlic powder
1 tsp. pepper
1 1/2 tsp. red pepper flakes
2 eggs

For the sauce:
1/3 cup mayonnaise
1 T. lemon juice
1 T. garlic powder
1/2 tsp. salt
1 tsp. pepper

Directions:
Directions:
1. Preheat oven to 450º.
2. Slice zucchinis into 1/2 - 1/4 inch slices.
3. In a large bowl, mix together bread crumbs, Parmesan cheese, salt, pepper, garlic powder, basil, and red pepper flakes.
4. In a small bowl, whisk eggs together.
5. Take a zucchini slice and dip it in egg wash, then coat it in bread crumb mix, coating all sides and patting mixture onto both sides. Place each slice on a large baking sheet. Repeat for all slices
6. Bake in oven 15-20 minutes until chips are golden brown.
7. In a small bowl, mix together mayonnaise, lemon juice, salt, garlic powder, and pepper.
8. Dip chips in sauce and enjoy!

Personal Notes:
The first time I made this, I made the sauce and put it in the fridge until the chips were done baking. I served up the chips with dinner and forgot completely about the sauce until everything was gone. Oops! They were awesome anyways! A little spicy kick with those red pepper flakes!
