1.5 c Orzo
1 can garbanzo beans
1/2 c crumbled feta cheese
scallions to taste
1/2 c mixed olives chopped (optional)
Marinated artichokes (small jar) cut into pieces; save the liquid
Sundried tomatoes in oil (7-8 pieces chopped)
Salt and pepper per taste

Cook orzo in water till done, drain and cool. Drain garbanzo beans and wash, chop up artichokes, olives and sundried tomatoes and add to cooled orzo. Add chopped scallions, feta, salt and pepper and drizzle marinade from artichokes (or just add simple olive oil and balsamic vinegar). Chill in refrigerator for half hour before serving.
