1/2 cup butter
1/4 cup olive oil
3/4 cup onion, chopped
24 oz. can diced tomatoes
2 tsp. salt
1/2 tsp. black pepper
1 tsp. oregano
1/2 tsp. garlic powder
10 oz. pkg. elbow macaroni, cooked and drained
1/4 cup grated Parmesan cheese
12 oz. mozzarella cheese, shredded

Directions:
Directions:
Heat 1/4 cup butter and oil in a saucepan; sauté onions for 5 minutes. Add the tomatoes, salt, pepper, garlic powder and oregano; bring to a boil and cook for 10 minutes. Melt the remaining butter in a 2-quart casserole. Add the cooked pasta, 2 tablespoons Parmesan cheese and 8 ounces of the mozzarella cheese. Toss well. Pour the sauce over the pasta and sprinkle with the remaining Parmesan and mozzarella cheese. Bake uncovered in a preheated 350º oven for 15 minutes.

My Italian friend Salvatore used to make this simple casserole every Sunday. It reminded him of "like mama use to make." It is the ultimate comfort food and super simple to make!
