1 quart milk
1/4 tsp salt
1/2 cup rice
1/2 cup raisins
2 eggs
1/2 cup sugar
1 tsp vanilla
1 cup evaporated milk

Directions:
Directions:
Heat milk and salt to simmer. Add 1/2 cup rice and simmer 15 minutes. Add 1/2 cup raisins and simmer 5 minutes. In a separate bowl, beat 2 eggs; add 1/2 cup sugar, 1 tsp vanilla and 1 cup evaporated milk. Blend a little of the hot rice mixture a few spoonfuls at a time to the milk and sugar mixture. Return mixture to stove to cook slowly until it thickens a little further. Pour into bowl, stirring pudding often until it cools. Serve warm or chilled with a sprinkling of nutmeg.
