1-1/4 lb. ground turkey
1/2 onion, minced
1 can (15 oz.) black beans, rinsed and drained
1 c. salsa
1 taco seasoning packet
2 tbsp. curry powder (more or less, to taste)
2 c. (8 oz.) shredded Mexican cheese blend, divided
12 taco shells or tortillas
shredded lettuce
sour cream and additional salsa

Directions:
Directions:
In a large skillet, cook turkey and onion over medium heat until meat is no longer pink; drain. Stir in beans, salsa, taco seasoning, and curry powder; heat through. Stir in 1 cup of cheese.

Spoon into taco shells. Sprinkle with remaining cheese; top with lettuce. Serve with sour cream and salsa if desired.
