4 boneless pork loin chops, each about 8 oz.
Salt and freshly ground pepper to taste
1 T. vegetable oil
2 apples, peeled, cored and sliced into 1/8ths
1 clove garlic, unpeeled
1/4 c .dry white wine
1/3 c. chicken broth

Sprinkle the chops with salt and pepper.

Heat the oil in a heavy skillet large enough to hold both chops and apples - when they are added - in one layer.

Heat oil in the skillet, add the chops and garlic, and brown well on one side, about 5 minutes. Turn and brown on the other side, about 10 minutes.

Push the chops aside an add the apples in one layer. Continue cooking 15 minutes, turning the apples so that they brown and cook evenly. I sometimes use 3 apples.I take the chops out of the skillet and brown the apples, putting the chops back in and the lid on the skillet to cook everything.

Remove the chops and apples to a serving dish. Pour off excess fat from the skillet. Add the wine, stirring to dissolve brown particles that cling to the bottom and sides of pan. Add the broth and simmer saucelike consistency. Discard the garlic.. Pour sauce over the chops and apples and serve.

We have made this lots of times. You can use any kind of pork chops, and the apples cook faster if more thinly sliced. After the chops are browned, you can put the lid on the pan to cook a little faster and save juices.

This recipe says to pour off excess fat, but I have found that well trimmed pork chops do not produce much fat. I don't remember ever having to pour off fat.

We sometimes use 3 apples. After the chops are browned, remove them from the skillet and add the apples. When the apples are browned, return the chops to the skillet, cover and cook until the chops are done.
