¼ c sugar
½ c water
2 T soy sauce
2 T rice wine vinegar
2 T ketchup
1 T lemon juice
⅛ t sesame oil
1 T hot mustard
2 t water
1 - 2 t garlic red chili paste
1 c water chestnut
⅔ c mushroom
2 T soy sauce
2 T brown sugar
½ t rice wine vinegar
3 T oil
1 lb. ground chicken
3 T chopped onions
1 t minced garlic
4 - 5 leaves iceberg lettuce

Prepare ingredients ahead of cooking chicken mixture.

Make special sauce by dissolving sugar in water in small bowl. Add soy sauce, rice wine vinegar, ketchup, lemon juice and sesame oil. Mix well and refrigerate sauce until ready to serve wraps. Also, combine hot water with hot mustard and set aside. When serving wraps, individuals may spice up special sauce with desired amount of hot mustard mixture and/or garlic chili sauce.

Mince water chestnuts and mushrooms to about size of small peas and set aside. Food processor works well for this. Prepare stir fry sauce by mixing soy sauce, brown sugar, and rice wine vinegar together in small bowl. Bring oil to high heat in wok or large frying pan. Saute ground chicken for 4 to 5 minutes or till done. With pan still on high heat, add another tablespoon of vegetable oil, then add garlic, onions, water chestnuts and mushrooms to pan. Stir and sauté for a minute or so. Add stir fry sauce to pan and saute mixture for couple more minutes. Serve with lettuce leaves. Top with special sauce.
