4 c fresh tomatoes, cored/peeled/chopped or 1 can whole tomatoes, crushed
4 c tomato juice, mixture of juice and vegetable or chicken stock or stock mixture
12 - 14 fresh basil leaves, washed and chopped
1 c heavy cream
¼ lb. butter, unsalted
salt, to taste
¼ t cracked black pepper
lemon juice, optional

Directions:
Combine tomatoes, juice and/or stock in saucepan. Simmer 30 minutes. Remove from heat. Add basil. Puree tomato mixture in small batches in blender or food processor. With hand-held immersion blender, mixture may be pureed all at once right in cooking pan . Return to stove. Add cream and butter, while stirring over low heat. Add salt and pepper. A garnish of basil leaves may be added. Serve with favorite salad and bread.
