PIE CRUST:
3 cups flour
1 1/2 cups shortening
1 tsp salt
1 egg, slightly beaten
1 tbsp cider vinegar
4 tbsp water

PUMPKIN PIE FILLING:
1 large can pumpkin
1 cup brown sugar
1 cup white sugar
1/4 tsp cloves
3 tsp cinnamon
2 tsp ginger
1 tsp salt
4 eggs, beaten
2 cups evaporated milk & 1/2 and 1/2

NEVER FAIL FLAKY PIE CRUST:
Cut flour, shortening and salt until the size of peas. Mix egg, vinegar and water together; add to flour mixture. Stir with spatula to stir through. Then stir with fork until mixed well. Makes three 2-crust pies.

PUMPKIN PIE FILLING:
Combine first 8 ingredients and mix well. Measure out the evaporated milk, adding 1/2 and 1/2 to make 2 cups total. Heat to scalding point. Add to first 8 ingredients and mix well. Pour into three prepared pie crusts. Bake at 350º for 1 hour or until knife inserted into pie comes out clean.
