1 1/2 cup brown sugar
1/2 cup oil
1 egg
1 cup buttermilk
1 tsp salt
1 tsp soda
1 tsp vanilla
3 cups flour
1 1/2 cups diced rhubarb
Topping
1/2 cup sugar
1/2 tsp cinnamon
1 Tbsp butter

Directions:
Directions:
Cream sugar, oil, egg and buttermilk. Add salt, soda, vanilla and flour. Fold in rhubarb. Spoon into 2 greased, 8x4 pans. Combine sugar, cinnamon and butter and put on top. Bake at 350º for 1 hour. Remove from pan and cool.
