Ingredients: Crust: 1 1/2 c vanilla wafers, crushed 3/4 c almonds, finely chopped 1/4 c sugar 1/2 c butter, melted Filling: 32 oz cream cheese, softened (4 pkgs) 1 1/4 c sugar 4 eggs, beaten 1 1/2 tsp almond extract 1 tsp vanilla Topping: 2 c sour cream (16oz) 1/4 c sugar 1 tsp vanilla toasted almonds for garnish (optional)

Directions:Preheat oven to 350 In a bowl. combine the wafer crumbs, almonds and sugar, stir in the butter and mix well. Press into the bottom of a greased 10" springform pan, set aside. In a large bowl, beat cream cheese and sugar until smooth, Add eggs. beat on low speed just until combined. Stir in extracts. Pour onto crust. Bake for 50-55 mins or until center is almost set. Remove from the oven, let stand 5 mins. Combine the sour cream, sugar and vanilla. Spooning carefully on top of cake to edges of pan. Bake 5 mins longer. Cool on a wire rack for 10 mins. Carefully run a knife around the edge of pan to loosen. Cool for additional hour. Refrigerate overnight. Garnish before serving if desired.

Notes: One of my favorites. Cake has a creamy texture more so than traditional cheesecakes (NewYork style). But the flavor is sooo good! Original recipe from taste of home.
