3 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/3 cup sugar
2 1/2 cups milk
2 tbsp. vanilla extract
1/4 cup yogurt
2 eggs
butter

Directions:
Directions:
Sift flour, baking powder, baking soda, salt and sugar into a large mixing bowl and stir together. Measure milk into a 4-cup measuring cup or bowl, then add vanilla, yogurt and eggs. Mix well to combine. Make a well in the center of the dry ingredient mixture. Add all but 1/2 cup of liquid mixture to dry mixture in 3 or 4 quick strokes, mixing to combine. Batter should be the thickness of sour cream. If too thick, add remaining liquid bit by bit until texture is correct. Grease griddle with thin film of butter and heat until drops of water dance across the top. Ladle 1/3 cup of batter onto griddle. Cook until top appears dry and bubbles stop appearing, about 3 minutes. Turn and cook on second side until pancakes feel firm and dry when pressed, about 2 minutes.

A friend gave me this recipe which originally was printed back in 1998 in the LA Times. Kids and adults love these pancakes, and you can get creative by adding fruit or chocolate chips. A favorite is crushing Girl Scout Thin Mint cookies and adding them to the batter.
