Ingredients: Cookie: 1/2 c. butter 1/2 c. sugar 1/2 tsp. baking powder 1/4 tsp. baking soda 1 large egg, beaten 1/3 c. frozen pink or regular lemonade concentrate, thawed 3 drops red food coloring ( or 1/2 tsp. food color gel) 1 3/4 c. flour
Frosting: 2 Tbsp. butter 2 c. powdered sugar 2 tsp. pink or regular lemonade concentrate, thawed 3 or 4 tsp. milk 2 drops red food coloring

Directions:Beat softened butter with sugar until light and fluffy. Add baking powder and soda. Mix in egg and lemonade concentrate. Add food coloring. Add flour, 1/2 cup at a time. Refrigerate if too sticky. Drop by teaspoonfuls on ungreased cookie sheet. Bake 10-12 minutes at 350º until edges are golden brown. Cool 2 minutes, then remove to rack.
For frosting, beat butter and powdered sugar. Mix in lemonade concentrate. Beat in milk until almost thin enough to spread. Add food coloring, stir until even color. Adjust consistency with added sugar or milk. Frost cooled cookies. |

I rolled batter (after chilling for a while) into walnut-sized balls. Skip the frosting! We made it and tried it out, but decided the cookies were just fine unfrosted. Besides the baked cookies weren't the same color pink as the frosting...
