Pie:
1/2 c. sugar
1/2 c. corn startch
1 1/2 c. water
3 eggs yolks, slightly beaten
3 T. buter
1/2 c. lemon juice
1 T. grated lemon rind

Meringue:
3 egg whites
1/4 t. cream of tartar
6 T. sugar
1/2 t. vanilla flavoring

Pie:
Mix sugar and cornstarch in a saucepan. Gradually stir in water. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil 1 minute. Slowly stir at least 1/2 the hot mixture into egg yolks, then blend into hot mixture in sauce pan. Boil 1 minute longer, stirring constantly. Remove from heat; continue stirring until smooth. Blend in butter, lemon juice and rind. Pour into baked 9" pie shell. Cover with meringue.

Meringue:
Heat oven to 400º Beat egg whites with cream of tartar until frothy. Gradually beat in sugar, a little at a time. Continue beating until stiff and glossy. Beat until sugar is dissolved. Beat in flavoring. Cover pie filling and bake 8 to 10 minutes, until meringue is browned.
