2 lbs. pizza dough, sausage, pepperoni, caramelized onions, mushrooms, grilled eggplant, grilled red & green peppers, mozzerella cheese, 1 large can of crushed tomatoes.

Take your dough out of the fridge before you start prepping your toppings...it's easier to work with room temperature dough. I prep all of the toppings first. This makes for a much faster and easier way for everyone to make their pizza before putting it back on the grill to melt the cheese. I buy the grilled peppers and eggplant in the frozen veggie section of the grocery store.,,,it's quicker and easier, and they taste really good. they just need to be thawed and quickly heated in a saute pan..I usually do my veggies first then caramelize my onions. Brown the sausage and then drain it. Put all the toppings aside.

I usually use 2 lbs. of pizza dough. I also light the gas grill before I start cutting and stretching the dough. This gives it time to heat up. I cut each pound of dough into 6 to 8 pieces. Roll each piece out until it's a small circle or rectangle...the shape doesnt matter.

Spray the grill with some non stick spray so the dough doesnt stick. I usually turn 2 of the burners off so the grill doesnt get too hot. Lay dough directly on the grill for approx. 2 to 3 minutes on each side. Remember that you dont want the dough to get to dark because it goes back on the grill after the toppings and cheese are put on it.

I grill all of the dough pieces first, and place them on a platter. Once the dough is finished, everyone gets to put their favorite toppings on...place the pizzas back on the grill until the cheese melts.
