4 c. apples, finely chopped
2 c. sugar
2 eggs
1 c. cooking oil
2 1/2 c. flour
2 tsp. soda
1 tsp salt
1 tsp. cinnamon
1 c. pecans

Glaze:
1 c. powdered sugar
1 lemon
Directions:
Directions:
Combine chopped apples and sugar and let stand in mixing bowl. In another bowl, beat egg whites stiff and add yolks and beat again. Add oil and mix well. Let stand. Sift dry ingredients together. Add oil/egg mixture to apples/sugar mix and mix well. Add dry ingredients and nuts and stir well. Pour in well greased and floured heavy Bundt pan or tube pan. Bake at 350º F for about 1¼ hours or until done. Turn out of pan while hot and drizzle with glaze.

Glaze (optional):
Combine powdered sugar dissolved in juice of 1 lemon.
