2 Tbsp. oil
2 pounds stew meat, cut in 1 1/2 inh cubes
1 large onion, sliced
1 clove garlic
4 cups boiling water
1 Tbsp. salt
1 Tbsp. lemon juice
1 tsp. Worcestershire sauce
1/2 tsp. pepper
1/2 tsp. paprika
1 or 2 bay leaves
Dash allspice or cloves
6 large carrots, cut in quarters
6 medium potatoes, diced
1/2 cup cold water
1/4 cup flour

It's the browning that gives a stew the rich color and flavor. Heat oil in skillet, I use an electric skillet. This takes about 20 minutes. Add sliced onions, garlic, boiling water, salt, lemon juice, sugar, Worcestershire sauce, pepper, paprika, bay leaf and allspice. Gentle cooking makes the beat tender. Simmer a couple of hours. Add the vegetables and simmer about 30 minutes longer. Discard bay leaf. Pour cold water and flour and beat to blend. If you would like a darker richer gravy, add a few drops of Kitchen Bouquet. Push vegetables and meat to side and add flour mixture to thicken. Simmer about five minutes.

I use sweet potatoes and Irish (red) potatoes. My Daddy always called red potatoes Irish potatoes. He would grow them to have during the winter. He stored them under the house. He sprinkled lime on them to preserve. I think it was the same type white lime that he used on the dairy barn floor.
