1/2 c. onions slices
2 Tbsp. olive oil or veg. oil
1 pound groupd beef
2 one pound cans (4 cups) tomatoes
1 6 oz. can tomato paste
1 8 oz. can seasoned tomato sauce
1 3 oz. can sliced mushrooms
1/4 c. chopped parsley or dried parsley
1 1/2 tsp. oregano
1 tsp. salt
1/4 tsp. thyme
1 bay leaf
1 cup water (use water to rinse out tomato paste and sauce cans)

Directions:

I use an electric skillet to make sauce.
Cook onions in hot oil till almost tender, add meat and garlic; brown lightly. Add remaining ingredients.
Simmer uncovered 2 to 2 1/2 hours or till sauce is nice and thick; stir occasionally. Remove bay leaf. Serve over hot spaghetti. Add Parmesan Cheese.

I use leftover sauce for another meal. Fry sliced breaded eggplant, add a slice of cheese and serve with sauce on top.
