3 egg yolks
1 to 2 Tbsp. lemon juice
1/4 tsp. salt
Dash cayenne pepper or hot sauce
1 tsp. Creole Mustard (optional)
1/2 cup butter, melted

Directions:
Directions:
Blend first 4 ingredients in blender on high speed for 30 seconds. Slowly add melted butter. Sauce will keep at room temperature for an hour before serving. Yields about 1 cup sauce.
