4 tblsps butter
2 cups carrots
1 cup celery
1 large onion
4 tblsps flour
2 tblsps parsley
5 14 oz cans chicken broth
1/2 tsp pepper
1 lb cooked boneless chicken, cut into chunks

Directions:
Directions:
Melt butter over medium heat and add carrots, celery and onion. Saute until tender. Stir in flour with whisk (can add more butter as needed with equal parts flour). Gradually add chicken broth and pepper, stirring with a whisk until mixture is smooth. Bring to a boil, cover and reduce heat and simmer. Add chicken, cooking until vegetables are tender. Add accine di pepe or other small pasta, rice or potatoes.
