3 tblsps extra virgin olive oil
1 small pkg baby bells mushrooms, chopped
1 medium onion, chopped
Salt and pepper
1 1/3 lbs. ground turkey (avg wt of a 1 lb pkg)
sage to taste
1 tblsp Worcestshire sauce
1/2 cup italian bread crumbs
1 egg, beaten

Directions:

Heat a nonstick skillet over medium high heat. Add 2 tblsps of the oil to the pan.Add chopped mushrooms, onion, and season with salt and pepper. Saute mushrooms and onions 5 or 6 minutes until mushrooms are dark and tender. Remove from heat to cool. When cool, add turkey to the mushroom mixture. Make a well in the center of the meat. Add sage, Worcestershire sauce, bread crumbs and beaten egg and season with salt and pepper. Mix until well incorporated. If making burgers, form into patties and broil on low for 5 mins. each side. Can also be fried in remaining 1 tblsp of oil.

I use this recipe for both turkey burgers and meatloaf and vary the spices and seasonings, sometimes using barbecue sauce or other meat marinade. Can also add gravy for a change.
