3 T yeast
4 C warm water
4 C freshly ground whole wheat flour

Then first rise.

1/2 C melted butter or vegetable oil
2/3 C honey or molasses
1 T salt
4 T dough enhancer
1 C prepared oatmeal (optional, but tasty!)
6-8 C freshly ground whole wheat flour

Directions:
Mix first three ingredients in a bread mixer, then cover and let rise for 30 minutes. This is a sponge and is important for the yeast to get a head start.

Then add butter, honey, salt, oatmeal and dough enhancer. Add flour gradually while mixer is on, allowing the dough to knead after adding each cup. Knead for 5 minutes or so after all the flour is added. Dough will be slightly sticky. You don't want it to be too dry or elastic as this will make the bread heavy.

Put dough in an oiled bowl and let rise a second time, for about 30 minutes, covered.

Shape loaves into oiled loaf pans (4-4x9 pans, approximately), then let rise another 30 minutes, covered.

Bake for 30 minutes at 350º. Remove loaves from pans and butter top for tasty, shiny crust, and cool.

Each year, the Young Women in my ward ask for "Nancy Bread" to be part of the menu at girls camp, so I send a bunch of homemade loaves and butter and jelly with them to enjoy!
